Perfect Pancakes
Pancakes. I have not met one person who doesn't like 'em. From scratch, fresh off the griddle...YUM. I like to cook them until they're a little crispy on the outside - it's just my family's preference. That way, they have a little crunch on the outside and are fluffy on the inside. But by all means, cook them exactly how you like them!
Ingredients:
3/4 cup milk (I use regular or almond)
2 tablespoons apple cider vinegar (or regular white)
1 egg
1 cup all-purpose flour (or whole-wheat pastry flour)
2 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons butter, melted
For some fun, you can add any fruit or chocolate chips.
Also, this recipe yields enough for my family of four so please double the recipe if you have more hungry, pancake eaters! ;)
Directions:
Whisk together the milk, vinegar and egg in a small bowl or measuring cup. In a large bowl, whisk the flour, sugar, baking powder, baking soda, and salt.
Pour the wet ingredients into the dry and add the melted butter. Mix together gently, cautious of not over mixing (stop when it's just mixed together). Once it's mixed, let the batter sit for 5 minutes to let the batter do it's magic. It will thicken and get a little bubbly.
Heat a griddle pan or fry pan over medium heat. Coat with butter or use cooking spray. Pour the batter to whichever size you like. I usually use 1/3 cup but sometimes somebody requests an extra large one, ha. Flip when the bottom releases from the pan and is to your liking. A good sign to flip is when holes/bubbles form.
Serve with warm maple syrup. Happy pancake eating!
