Chicken Sausage Sheet Pan Dinner
If you know me, you know that I am all about that sheet pan dinner. This new trend is genius. I mean, ONE dish to clean? Best news ever. This particular one is as easy as it gets. Cut up some chicken sausage, dig through your fridge to find random veggies that might be nearing its end. Easy. Eliminate waste. Done.
Ingredients:
Your favorite chicken sausages (I used the Original Brat Hans Chicken Spinach sausage but Costco sells some great ones as well)
1 small or 1/2 large red onion
1-2 bell peppers
broccoli
zucchini
olive oil, salt and pepper
1 garlic clove minced or garlic powder
some minced rosemary or whatever herb you like (optional)
Directions:
Preheat the oven to 375 F degrees. Largely dice all the veggies so that they are all roughly the same size. That way they cook more evenly. Slice the sausage into thirds. Throw it all on a rimmed sheet pan and drizzle with olive oil and season with salt, pepper, and garlic powder (if using.) Add in the minced garlic and rosemary as well, if using. Give it all a good toss making sure everything is coated.
Spread out it all out so that it isn't overly crowded or laying on top of each other. Place the pan in the oven and bake for about 30 minutes.
Can serve as is, or with a side salad, brown rice or quinoa. Eating wholesome does NOT have to be complicated or taste bad.
Also, remember to sub in whatever veggies you have or like. Just make sure to cut them relatively the same size.
