Simple Dutch Baby

Growing up, I have never, ever heard of or seen a Dutch Baby. Where have these been all my life??? A cross between a pancake and a popover, they are perfectly sweet. For those mornings you want pancakes but don't want to be standing by the stove flipping hot cakes, serve this. With a side of bacon.

Simple Dutch Baby

Ingredients:

3 tablespoons butter
3 eggs
3/4 cup milk (room temperature - can microwave for about 25 seconds)
3/4 cup flour
1 tablespoon sugar
1-2 teaspoons vanilla extract
powdered sugar for sprinkling over the top

Directions:

Preheat an oven to 400 degrees. Add the butter to an oven proof pan (I like my cast iron) and place into the oven.

Add the eggs, milk, flour, sugar and vanilla extract into a blender and blend until mixed.

Very carefully, remove the hot pan from the oven (the butter should be melted and may be a little brown). Swirl the pan to coat the entire surface with the melted butter. Add the content from the blender to the hot pan and swirl to get the butter incorporated.

Return the pan to the oven and bake for about 20-25 minutes, until it puffs and is golden brown on the edges. Sprinkle powdered sugar over the top with a sieve. Enjoy with or without maple syrup. Oh, and bacon. Yum...
