Poached Eggs over Arugula, Bacon and AvocadoToast
How's that for a name? Ha! All of the ingredients are just SO tasty, I couldn't leave anything out of the title ;)
Truly so simple but my family and I could literally....eat...this...every...single...day. It's something I would expect at a lovely, quaint breakfast spot. Now you can do it all in your own home whenever you get the hankering for it (aka everyday, okay maybe every weekend).
Poaching eggs is another thing I was always afraid to try. But again, I realized it wasn't scary at all. Lesson learned? Just because something looks intimidating, try it anyway. Most of the times, you may surprise yourself.
Ingredients:
Eggs
Bread for toast (I used simple, local white bread. You can use any bread you love - an English muffin would be tasty too)
Arugula
Avocado sliced
Bacon (cooked how your normally cook - sometimes I leave out the bacon and still thoroughly enjoy it)
Olive oil, Salt and Pepper
Directions:
To poach a single egg, fill a small sauce pan or pot with water and bring it to a light simmer on medium heat. While water is heating, crack an egg into a small glass bowl. Once the water is at a light simmer, stir the water in one circular motion creating a tornado. With the water moving, gently add the egg (from the bowl) into the water. Cover. Turn off heat and let it sit undisturbed for 3 minutes. Once 3 minutes is up, gently remove the egg with a slotted spoon.
To poach several eggs at one time, fill a fry-pan with water at least an inch to an inch and a half with water. Bring the water to a light simmer over medium heat. Crack one egg into a small bowl and gently slide the egg into the water. Continue to crack another egg into the small bowl and add gently to the water. Make sure there is space in between the eggs. Leave the eggs in the lightly simmering water for 4-5 minutes. Remove gently with a slotted spoon. I use my biggest fry pan and get 4 eggs to poach at one time.
Toast your bread. Add a layer of arugula. Drizzle with olive oil, add a little salt and pepper. Add a slice or two of cooked bacon. Top the bacon with however many avocado slices your heart desires. And finally, top with an egg or two and sprinkle a little salt and pepper.
To make this easier, I like to have an assembly line ready. Cook your bacon, slice your avocado, have the bread ready next to the toaster, gather your arugula, olive oil and salt and pepper. Once ready, start poaching your eggs and toasting your bread. Then bring it all together and enjoy! Yum.
Another note: To gain some confidence, I started by poaching one egg by itself. Once I mastered that, I attempted the fry pan. It is a little trickier but you can do it (even if it takes a few tries)! Just be patient and gentle. The end result? Warm and gooey egg yolks running down your bacon, avo, arugula toast. So worth it. I promise.
