No Fuss Fried Chicken

The majority of the time, I like to eat healthy. But sometimes, I just feel a hankering for some fried chicken. And coleslaw. And biscuits. Okay and maybe some mashed potatoes.

These taste amazing and totally fulfill that craving without the yucky feeling afterwards. Clean frying oil. Quality chicken. Simple, real ingredients.

Fried Chicken

Ingredients:

3 eggs
1/3 cup water
About 1 cup of Texas Pete hot sauce (or any other red pepper hot sauce)
2 cups self rising flour (or a mixture of 2 cups flour, 2 teaspoons baking powder and 1/2 teaspoon salt)
1 teaspoon black pepper
Garlic powder, salt and pepper to season chicken
One 2 to 2 1/2 pound whole chicken, cut into pieces (if breasts are large, I like to cut them in smaller pieces)
Vegetable, Canola or Peanut oil for frying

Directions:

Whisk the eggs, water and hot sauce together. In a separate bowl, whisk the flour and black pepper together.

Heat oil in a large cast iron skillet or a deep pot to 350 degrees (do not fill more than half way).

While heating, season the chicken liberally with garlic powder, salt and pepper. Once seasoned, add a piece of chicken into the egg mixture, making sure to coat thoroughly. Next, dredge in the flour mixture completely. Set coated chicken on a large plate or wired rack lined pan. Continue with the rest of the chicken.

When ready to fry, carefully fry the chicken 3-4 pieces at a time. Make sure not to overcrowd and add slowly. Dark meat will take about 14 minutes. White meat will take about 8-10 minutes.

Once finished, place on paper or paper towel lined plate to absorb excess oil. Sprinkle a tiny salt over the top if you feel like it, ha.

We love to eat fried chicken with ketchup and extra hot sauce. My mouth is watering now.
