Açaî Bowls

Açaî Bowls

These puppies are something I never knew we could easily make at home. They seemed too fancy??? I am not sure what it was about them but it never crossed my mind that we could have it at home. My husband was raving about them from our local juice shop so I thought let's try and make it at home. Well, we did and it took a few tries to get it just right. Once we did, it's been a staple in the Lee household. And for the fraction of the cost?? Winning.

When you want something icey, cold, fresh and deeeelicious - whip this up!

Ingredients:
[This makes two bowls.]

1/2 cup coconut water
4 açaî packets (I like the original blend by Sambazon - in the frozen fruit section)
1/2  to 1 banana (optional - we use it when we have them, without makes it more icey)
1 to 2 tablespoons of peanut butter
1/2 cup ice

toppings:

your favorite granola (mine is Kind Oats and Honey Cluster Granola with Toasted Coconut)
chia seeds
sliced strawberries and/or banana
blueberries
toasted coconut (optional)

Directions:

Run açaî packets under cold water and break into pieces (still in the packet.)

Empty packages into blender and add the rest of the ingredients (except toppings). Blend together until smooth. Pour into shallow bowls and top with however many toppings you like!

So good I am salivating just thinking about one of these bowls. Yum.
