Crockpot Honey Garlic Chicken

I first had this dish at a wonderful friend's house. She has a family of 7 and we are a family of 4. How was she going to feed so many people without slaving away in the kitchen and breaking the bank? This dish is just brilliant. So easy. Makes a lot. And most importantly, SO tasty! 

When you google this dish, a lot of different versions pop up. I have tried two and tweaked them to create this one.

Ingredients:

4 skinless chicken breasts, boneless or bone-in both work great
6 cloves of garlic, minced
2 tbsp ginger, minced or 1/2 to 1 tsp dried ginger
1/4 cup hoisin sauce (or ketchup works great too)
1/4 cup mirin (optional)
1/4 cup soy sauce (I love tamari)
3/4 cup honey
2 tbsp rice vinegar, or white vinegar
2 tbsp sesame oil
a little sprinkle of salt and pepper
 

Directions:

To the crockpot, add everything except for the chicken. Stir it together and once combined, add the chicken. Set to low and let it go for 4-6 hours. Once finished, shred with a fork and let it absorb the yummy sauce. Serve over rice with a side of blasted or steamed broccoli. Add scallions and toasted sesame seeds as a garnish if you'd like. And don't forget the sriracha if you are a hot sauce fan!
