Simple Black Beans

I promised to always be honest on here, so I’ll be very frank. I used to think eating beans was gross. Unless they were refried beans alongside chicken enchiladas, doused in tapatio.

But I kept introducing them to myself, especially in my Chipotle order. I wanted to like black beans. “They say they’re a healthy source of protein. So, let’s keep giving it a try,” I’d say.

Well, I am here to say, that I now love black beans! Especially like this. Simple, clean yet creamy and flavorful.

Ingredients:

1 can of black beans, drained and rinsed
a good sprinkle of cumin
a good sprinkle of garlic powder
salt and pepper to taste
squeeze of half a lime or lemon

Directions:

In a small pot, pour in the beans and add water just until the beans are covered. Add in the seasonings and bring to a boil. Then reduce to a simmer and let it simmer until all the liquid is evaporated. Stir as you go. They are done once some beans break and they become creamy. Make sure to taste and season before serving.

Eat as a side on Taco Tuesday or alongside enchiladas. Eat on your nachos. Eat as a dip with some tortilla chips. Or fill a tortilla with the beans and some cheese and have yourself a heavenly bean and cheese burrito. YUM. Who knew I would become a bean person.
