Honey-Tamari (Soy) Salmon with Carrots and Brussel Sprouts
My good friend inspired me to try a roasted carrot recipe she loves. As I was getting ready to make it, I realized that the ingredients were almost exactly the same as how I make my salmon! So, lo and behold, this sheet pan meal was born. As you probably can tell, I am all about keepings things simple, easy, healthy and delicious. This definitely fits the bill.
Ingredients:
2 lbs (ish) of salmon (preferably wild) or 4 fillets
4 carrots, sliced lengthwise (if thick) and chopped into 2 in pieces or use baby carrots sliced horizontally (if thick)
a couple handfuls of brussel sprouts cut into fourths if large, otherwise in half
1/4 cup tamari or soy sauce
1/4 cup honey
splash of rice wine vinegar or white vinegar
olive oil
salt and pepper
red pepper flakes, optional
Directions:
Preheat your oven to 450 F degrees and place a rack 1/3 from the bottom of oven.
Mix the honey, tamari and splash of vinegar.
Spray a rimmed baking sheet with olive oil. Toss the carrots and brussel sprouts on pan and drizzle with some olive oil. Move the veggies to the border of the pan. Place salmon in the middle and season with salt and pepper and red pepper flakes, if using.
Drizzle the veggies and the salmon with the honey-tamari mixture.
Roast for 18-20 mins and then finish under the broiler for 1-2 minutes.
