Quick Stir Fry

Sometimes life is hard. So dinner shouldn’t be. Anybody with me? This is an easy way to get nutritious food on the table that everyone will enjoy. Those hard days are hard, but the reality is, we all still need to eat. I promise, you will feel better after making this. Mentally and physically. Hugs to all you out there doing your best in life. <3

Ingredients:

I lb ground pork, chicken or turkey.
2 garlic cloves, minced
1 tsp ginger, grated or minced (I keep mine in the freezer and grate with micro blade with skin on and all)
1 bell pepper, sliced
1 onion, sliced
2 carrots, sliced
2 handfuls of swiss chard, roughly chopped or whole spinach
handful of brussels sprouts, sliced (optional, or use cabbage)
handful of cashews, chopped (optional as topping)

sauce
1/4 cup tamari
1/4 cup coconut sugar
1 tablespoon rice vinegar (or white vinegar)
1 tablespoon sriracha (optional)

Directions:

Heat a large pan on med-high heat. When hot, add the ground meat with a drizzle of tamari and a sprinkle of coconut sugar to season the meat. Once cooked, add in the minced garlic and ginger. When you can smell the garlic and ginger, add in the sliced onion, bell pepper, carrot and brussels sprouts and cook for a few minutes. Add in the chard or spinach and cook until wilted. Mix the sauce ingredients together in a small bowl and pour over the cooked meat/veg. Toss it all together and serve over rice or mix in some cooked rice noodles. (I used brown rice noodles meant for pad thai and it was delicious.) Top with chopped cashews if you have it in your pantry for an extra crunch.

Eating all those veggies will seem easy as you eat this. Win in my book!

p.s. This dish is so versatile, just slice up whatever veggies you have in your fridge. The colorful the better :)
