Soy-Glazed Salmon

Here is a quick, nutritious idea for dinner. I really enjoy a sweet, soy-based marinade for Salmon but have found the pre-made marinades to be full of stuff I don't want to eat. Like a millions grams of unnecessary sugar. This is a great alternative :) I threw on some veggies on the same pan as the Salmon so it becomes a one-pan meal. I'm all about that!

Ingredients:

4-6 Salmon fillets (5 to 6 oz each)
4 tablespoons Honey
1 tablespoon Soy sauce or tamari
1 tablespoon Dijon mustard
1 teaspoon Rice wine vinegar or white wine vinegar

1 pound Asparagus, trimmed
Olive oil
Salt and pepper

Directions:

Here is what you need (except I had zucchini instead of asparagus).

Preheat the oven to broil and make sure a rack is placed in the top third of the oven.

Line a large baking sheet with foil and spray with oil. Whisk the honey, soy or tamari, dijon and vinegar together.

Place the salmon, skin down, and sprinkle with a little salt and pepper. Then pour or brush a little bit of the glaze over each fillet. Spread the asparagus around the salmon and drizzle with a little olive oil and sprinkle a little salt and pepper.

Put the pan into the preheated oven and broil for 3 minutes. After 3 minutes, take the pan out and put more of the glaze on top of each fillet. Broil for another 3 minutes. Repeat with the glaze. Place back into the oven and finish broiling, 1-3 more minutes (depending on how you like it cooked).

Take out the pan and if you desire, put a little more glaze on top of the fish. Let it rest for a few minutes before serving. Enjoy with the asparagus and a side of rice!
