Baked Zucchini Fries

Baked Zucchini Fries

Guys, these are good. Crunchy on the outside, soft on the inside. Hot out of the oven, dipped in some sort of creamy sauce - um...can't get them in my mouth fast enough. 

Ingredients:

3 zucchini, sliced into 1/2 inch sticks resembling fries
1 cup bread crumbs + 1/2 cup freshly grated parmesan (or 1/4 cup pre-grated)
2 eggs, whisked
salt and pepper
 

Directions:

I was overzealous and got four zucchini out but ended up using 3 :)

Preheat your oven to 425 degrees F. Spray or oil a baking sheet.

Get your assembly line ready - zucchini into the egg, dredged into the bread crumbs/parmesan mixture.

Place onto the baking sheet and do not overcrowd (so that they have the chance to get crispy instead of steaming). Salt and pep the fries and pop them into the hot oven. 15 minutes, then take out and flip. In for another 15 minutes. 

Serve these with whatever sauce your heart desires! You could use ranch, make a ketchup/mayo sauce, a sriracha/mayo sauce or get the Trader Joes sriracha ranch (that's what I used here)...YUM.
