Not-Your-Average Roasted Broccoli

Not-Your-Average Roasted Broccoli

Okay. I know. Broccoli? My husband, Richard, is NOT a fan of broccoli but he actually ate a whole serving of this saying it was surprisingly good. That in itself is worthy of a post.

Ingredients:

Broccoli, (I like to cut the florets in half)
Olive oil or Avocado oil
Salt and Pepper
Red pepper flakes (optional)
1-2 cloves, minced garlic or a sprinkle of garlic powder
Grated parmesan or pecorino cheese
1/2 lemon

Directions:

Preheat the oven to 475. Toss the broccoli, oil, salt and pep, red pepper flakes (if using), and garlic on the pan. Place in the preheated oven for 18-25 minutes. I like ours pretty browned.

Once finished, remove from the oven and add a generous sprinkling of the cheese and squeeze half a lemon over the broccoli - still in the pan. Toss and serve. The lemon and cheese take it over the top. It's addicting!
