Roasted Balsamic Brussels Sprouts
Whenever I see roasted brussels sprouts on a menu, I always have an urge to order them. Lucky for me, I never had the ever-so-common, childhood experience of yucky brussels. When brussels sprouts are roasted until charred and crisp, they are just delish!
Ingredients:
1 lb brussels sprouts, sliced in half or into quarters if brussels are big
2 tbsp olive oil
2-3 tbsp balsamic vinegar
2-4 bacon slices, sliced into 1/2 in pieces (optional)
salt and pepper
Directions:
Preheat the oven to 425 degrees. Place the sliced brussels sprouts and bacon pieces (if using) on a sheet pan. Drizzle with the olive oil and balsamic vinegar. Season well with salt and pepper. Roast for about 20-25 minutes, shaking the pan once or twice while roasting. Then turn the oven to broil and let it crisp up. Watch it carefully as it can burn very quickly. Maybe a minute or so under the broiler. Taste to see if it could use more salt because you definitely don't want under-seasoned brussels. ;) YUM!
