Banana Bread (GF or regular)
Banana bread without the guilt that still tastes guilty. Give it a try! Oh and did I mention it's a one-bowl and done type of bread? Easy is always a winner in my book.
Ingredients:
3-4 very ripe bananas, mashed
1/3 cup coconut oil, avocado oil or melted butter
3/4 cup coconut sugar or light brown sugar
1 egg
1 teaspoon vanilla
1 teaspoon baking soda
1/2 teaspoon cinnamon (optional)
pinch of salt
1 1/2 cup of your favorite gluten-free flour (of all that I tried, I love cup4cup the most) or your regular AP flour
sprinkle of brown sugar for the top
Directions:
Preheat your oven to 350 degrees.
In a big mixing bowl, mash the bananas, Add in the coconut oil and sugars. Whisk in the egg and vanilla. Then sprinkle in the baking soda and salt, mix well. Lastly, add the flour and mix in gently until combined. Pour into a greased loaf pan (I use spray coconut oil) and sprinkle some brown sugar over the top for a yummy crust.
Bake for about 50 minutes, or until a toothpick comes out clean. Yum!
